Chocolate Birthday Celebration

It was my husband’s 45th birthday today.  He started his day opening gifts of chocolate from his kids, which included a coffee mug that says, “My life is Chocolate.”

We took him to Pi, an Italian wood-fired, oven-baked pizza place in Rochester.  We played at the park.  Hannah made the special cake that dates way back to his childhood.  In honor of his mother who always made it, we share the following recipe:

“That Cake”

1/2 cup cocoa

1/2 cup cold water

1/2 tsp. salt

2 tsp. baking soda

2/3 cup butter

1  2/3 cup sugar

2 eggs

2 cups all-purpose flour

1 cup buttermilk

Preheat oven to 350 degrees F.

In a small bowl, mix cocoa, water, salt and soda.  Let stand.

Cream butter and sugar, and then add eggs.  Blend in cocoa mixture.  Add flour and buttermilk alternately, starting and ending with flour.  Grease, flour and line two 8″ cake pans with parchment paper.  Pour batter into prepared pans.  Bake for 20 to 25 minutes.

When cool, frost with Mocha frosting:

1/2 cup cocoa

1 lb. powdered sugar

3 T. butter

hot coffee

Mix cocoa and powdered sugar.  Blend in butter, adding hot coffee 1 tablespoon at a time until the correct frosting consistency is attained.
